Sweet and Sour Chicken Recipe
A succulent sweet and sour chicken recipe.
500g (or approx 1 pound) chicken breast, skinless & boneless, sliced
250g (or approx ½ pound) pineapple pieces
2 cloves garlic, finely chopped
2 onions, cut into large wedges
1 cucumber, de-seeded and cut into chunks
1 small bunch shallots, chopped
4 dessertspoons white sugar
4 dessertspoons tomato sauce/ ketchup
2 tablespoons white vinegar
¼ teaspoon white pepper
dash soy sauce
dash salt
oil for frying
In a large frying pan, heat oil and add chicken and garlic.
Cook - stirring continuously - for 5 minutes, or until the chicken is cooked.
Add in onion, capsicum and pineapple.
Cook for 3 minutes, or until the onion has softened.
Add soy sauce, sugar, vinegar, tomato sauce/ ketchup & pepper.
Cook - stirring continuously - for 1 minute.
Add salt just prior to serving.
Serve on a bed of steamed rice or jasmine rice.
Serves: 4.
