4 chicken breasts (single breasts, skinned & boned)
4 slices proscuitto ham
4 slices Swiss cheese
1/2 cup breadcrumbs
1/4 cup plain flour
1/4 cup honey mustard (you can make your own by using regular mustard and adding a little honey)
Preheat oven to 180 degrees Celcius (or approx 350 degrees F).
One at a time, put the chicken breasts into a plastic bag, secure the top and pound them like crazy to flatten them out.
Put one slice of proscuitto and one slice of Swiss cheese on each of the flattened chicken breasts.
Roll each chicken breast up with the proscuitto and cheese inside, then use a toothpick poked through to stop the parcel from unraveling.
Roll each of the chicken breasts in the plain flour, then into the honey mustard, and finally in breadcrumbs.
Bake for approx 20 mins, or until you’re sure the chicken is cooked right the way though and the breadcrumbs are browning.
