Chicken Caesar Salad Recipe
A delicious and traditional chicken salad recipe that everyone loves.
600g (approx 3+ ¼ cups) cooked chicken, chopped
1 large cos lettuce, roughly chopped or torn
10 anchovy fillets, well-drained
200g (approx 1 cup) croutons (from a packet is fine)
100g parmesan cheese, grated or very finely sliced (try using a vegetable peeler)
1 egg
170ml (approx ¾ cup) olive oil
1 clove garlic, quartered
½ teaspoon Dijon mustard
2 tablespoons lemon juice
In a food processor (if you have one), blend egg, garlic, lemon juice, mustard and five of the anchovy fillets until the mixture is smooth.
While still blending, very slowly add in a drizzle of olive oil just until mixture thickens.
In a large salad or serving bowl, combine the cos lettuce, chicken, parmesan, croutons and the last of the anchovies.
Toss gently.
Drizzle with the egg and anchovy dressing just prior to serving.
Serves: 4.
