Chicken Breast Recipe
A delicious mediterranean chicken breast recipe that your family will adore!
2 chicken breasts, skinless, boneless & halved
500g mushrooms, washed & finely sliced
500g tomatoes, diced (canned or fresh)
2 cloves garlic, crushed or very finely chopped
2 onions, finely diced
4 slices Swiss cheese
1 cup dry white wine
1/4 cup parsley (fresh is best), roughly chopped
2 tablespoons olive oil
2 teaspoons thyme (fresh is best), ground
1/2 teaspoon salt
1/4 teaspoon black pepper
In a large frying pan, heat the olive oil.
Adjust heat to medium and add to the pan the chicken breasts, garlic and onion.
Cook - turning continuously - until the chicken has browned.
Add in the tomatoes, white wine, thyme, salt, pepper, mushroom and half the parsley.
Simmer for 20 minutes.
Put 1 slice of Swiss cheese on each of the chicken breast halves and simmer - covered - for another couple of minutes until the cheese has melted.
Serve over rice and use the remainder of the parsley as a garnish.
